Pazo de Seoane is its O Rosal blend, where Albariño from the Silvosa vineyard is joined by the sub-zone's other native grapes. Winemaker Ángel Suárez Vicente has the whole harvest hand-picked into small boxes, chilled on the way to the winery and passed over an optical sorter — the first in Rías Baixas — before pressing under inert gas. Each variety ferments separately at 15°C, part of the Albariño goes through malolactic for softness, and the blend rests on stirred fine lees until bottling.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with grilled fish, prawns, scallops and Galician-style octopus, or a green salad with goat's cheese.
