Established in 2011, the winery crafts world-class Chardonnay and Pinot Noir from estate and family-owned sites in the West Sonoma Coast and Russian River Valley. Their philosophy is rooted in minimal intervention: meticulous vineyard care allows the wines to express purity, balance, and a clear sense of place. The “3” in their logo symbolises the three founders and the three wine senses — sight, scent, and sip. 2021 saw a dry winter with below-average rainfall and a cool spring that delayed budbreak. Low yields and small berries contributed to concentrated flavours and fine texture. A steady, temperate harvest season produced Chardonnay with great aromatic lift and freshness. Grapes were hand-harvested and barrel-fermented using indigenous yeasts to preserve terroir character. The wine was aged for 14 months in 100% French oak (10% new, 90% used barrels). Its name comes from the Italian phrase *“Dolce Far Niente”* — “how sweet it is to do nothing.” Abandoned during Prohibition, the winery was restored in 1979 by Gil Nickel, who revitalised its legacy and developed 80 hectares across three vineyard sites. Far Niente is renowned for crafting benchmark Napa Valley Chardonnay, Cabernet Sauvignon, and its acclaimed late-harvest sweet wine, *Dolce*. Today, it remains one of California's most prestigious producers, blending innovation with meticulous tradition. Only top-quality fruit was selected and divided into 10 unique batches for vinification. Fermentation occurred in temperature-controlled French oak barrels with selected yeasts, lasting one to two months. The wine was then aged for 28 months in 100% new French oak, developing a rich texture, caramelised depth, and vibrant aromatics.

Food and drinking

Good with cheese and dessert. Originally a fireworks technician, Quady redirected his creativity to winemaking, crafting his first port-style wine from Amador County Zinfandel. His breakthrough came with the release of *Essensia*, made from Orange Muscat, which became an instant success and established Quady as the leading U.S. producer specialising exclusively in sweet and fortified wines. Today, the winery continues to win international acclaim, using Portuguese varietals and traditional techniques to create modern, expressive dessert wines. Crafted using the same fortification method as traditional Port from Portugal's Douro Valley. A blend of several vintages, averaging five years of age, is matured in small 60-gallon oak barrels to achieve complexity and harmony. Only the finest wines from the best vintages are selected for inclusion in this cuvee, which stylistically lies between a ruby and a tawny Port. The first vintage was produced in 1988, hence the name “Batch 88”.

Food and drinking

Good with cheese and dessert.
