The fruit comes from a one-hectare plot in the historic Cerequio vineyard in the commune of Barolo, at around 320 metres with a southern exposure, the vines averaging 36 years and planted at 4,600 per hectare in limestone and clay-rich soils with elements of Marne di Sant'Agata, cultivated sustainably and hand-harvested in October. After gentle destemming and crushing the musts fermented in tank for 18 days, the Tempranillo and Mazuelo blended in the vineyard and co-fermented while the Graciano was vinified apart; malolactic conversion happened naturally over four months, and after stabilisation through the winter the best batches were chosen and left in barrel for six years with ten traditional rackings, bottled unfiltered to hold the aromatics, then aged a further six years in bottle. Coteau de Vernon is 2.5 hectares of south to south-east facing granite and biotite terraces in the heart of Condrieu, vines of 50 to 70 years on 110 Richter rootstocks, planted at 8,000 to 10,000 per hectare and yielding just 25 hectolitres; the terraces are too steep for machines, so the vineyard is maintained by hand, without weed killers or insecticides, and is certified organic. The fruit was picked at full maturity, meticulously sorted and pressed immediately, the clear juice fermented in 225-litre barrels over four to five weeks, then matured twelve months on its fine lees in oak barrels, 25% of them new, with regular bâtonnage.
