Valfresca comes from a 2.5-hectare plot bought in 2006 and replanted in 2007, reserved for this cuvée and made only in the better years: south-facing at 310 metres on cool calcareous soil that holds water and sends roots deep, Guyot-trained at 7,500 vines per hectare, treated only with copper and sulphate when needed and worked with sexual confusion in place of insecticide. The grapes were picked by hand at the end of September, destemmed and pressed gently to keep the berries whole, then fermented with wild yeasts in stainless steel to a maximum of 24°C for about twenty days with gentle punching down twice a day. Malolactic conversion took place in oak, followed by eighteen months in 20-hectolitre French oak vats and four more years in bottle. The 2015 season was warm and dry with an early harvest, and rain and a drop in temperature in the last week of August left concentrated fruit with balancing acidity.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 16–18°C.
