Founder's Selection is a tribute to Roberto Echeverría Snr, the original winemaker, and is now made by Roberto Echeverría Jr. The fruit comes from Maipo Alto, 400–800 metres up in the Andean foothills, where warm afternoons and cold night air sliding down the slopes give the big day-night swing that makes bold but elegant Cabernet, on medium-fertility red and black clay. The grapes were hand-picked into 18 kg boxes, fermented ten days in 12,000-litre steel vats at 25–28°C with a further 10–15 days on skins, then aged 18 months in new French barriques, blended, and returned to barrel for six more. 2017 was a warm, early harvest that gave soft tannins, deep colour and strong aromatics.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with roast beef, lamb with rosemary, barbecue and mature cheddar. With eight years in bottle it is drinking now, and will hold for five more. Serve at 16–18°C.
