Her emphasis is on the balance of the soil: the cool, clay-based vineyards hold water well and lend the wine its power, and the estate is certified HVE3 for its environmental performance. Le Secret is the estate's top cuvée, each parcel vinified separately in temperature-controlled stainless steel to keep the fruit pure, then aged in selected barriques and held in bottle before release. The 2018 vintage began wet, with hail in places, before a hot, dry summer with unusually cool nights produced small, thick-skinned, highly concentrated berries.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 16–18°C.
