En Chevret lies beneath the slope of Les Caillerets at 200 to 250 metres on reddish clay over Oxfordian and Argovian limestone, and this cuvée comes from a massale selection of 30 to 40-year-old vines in the deeper-soiled lower part of Nicolas Rossignol's parcel, hand-harvested and fully de-stemmed. Fermentation ran in tank, the cap moistened with juice from the low tap before gentle pigeage and remontage, followed by two winters in French oak with none of it new. 2018 was the hottest vintage since 2003, near drought through July and August, and the ripe fruit kept its freshness on the palate even as acidity read low in analysis.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 16-18°C.
