Nebbiolo 100%.\u003c\/p\u003e\n\u003ch3\u003eThe producer\u003c\/h3\u003e\n\u003cp\u003eVietti is based in Castiglione Falletto in Barolo country, and Roncaglie is its Barbaresco cru: a south to south-west-facing slope at around 280 metres in the Barbaresco commune itself, on limestone and clay, planted with Guyot-trained vines now around 35 years old at 4,600 per hectare. Winemaker Eugenio Palumbo ferments the hand-picked fruit in steel for about three weeks on the skins with regular pump-overs, bracketed by cold macerations before and after fermentation and using the traditional submerged-cap method. Malolactic happens in wood, and the wine then spends around 30 months in large Slavonian and French oak casks before bottling without filtration.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with roast beef, braised game, rich mushroom risotto and aged Piedmontese cheeses. Drinking now with a long decant, and built to develop for two decades or more in a cool cellar. Serve at 16–18°C.
