Cava that requires certified organic grapes, hand-harvesting, estate vinification and long lees ageing. The estate is 500 hectares of forest and vines at around 360 metres in the hills of Subirats, with 102 hectares of vineyard on shallow terraced soils that keep vigour and yields low, 60% as bush vines, farmed with cover crops and pheromone confusion in place of sprays. The 2019 grapes were whole-bunch pressed very gently, the must cold-settled, fermented in temperature-controlled steel, then given its second fermentation in bottle by the traditional method and 48 months on the lees.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with jamón, grilled prawns, roast chicken and aged cheeses.
