It remains family-owned, works estate vineyards in Hawke's Bay, Martinborough and Marlborough, and is certified by Sustainable Winegrowing New Zealand. Le Sol, French for the soil, takes its name from the Gimblett Gravels, a district lying on the ancient bed of the Ngaruroro River, which changed course in 1867 and exposed the soils to viticulture: greywacke stones over silt and sand to a depth of at least forty metres, absorbing sunlight by day and radiating heat at night, making this the warmest site in Hawke's Bay without the excessive heat that would strip out floral aromatics. The vines sit in the stoniest part of the vineyard and are a heritage clone of Syrah brought to New Zealand in the 1840s. The fruit was hand harvested, meticulously sorted and partially destemmed, with 27% vinified as whole bunches, fermented in open-top French oak vats and matured seventeen months in French and Austrian oak barriques and puncheons, 32% of them new.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eBest at 16-18C, with an hour in a decanter. It suits roast venison, peppered beef, slow-cooked lamb and hard sheep's cheese, and should drink well for five to ten years.
