Te Kahu means ‘the cloak’ in te reo Māori and refers to the mist that envelops the Giants winery in the Tukituki Valley; the fruit comes from the Gimblett Gravels, the old bed of the Ngaruroro River, exposed when the river changed course in 1867. Greywacke stones run over silt and sand to a depth of at least forty metres, absorbing heat by day and radiating it back at night and draining fast enough to keep vine growth in check, which makes this the warmest site in Hawke's Bay while stopping short of the heat that would cost the fruit its floral aromatics. The grapes were both hand and machine harvested, the hand-picked portion sorted and all of it destemmed, fermented with selected yeasts in closed-top stainless steel tanks, then matured sixteen months in oak barriques of which 18% were new.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 16-18°C.
