Armando Gianolli bought abandoned plots around the village of Erbin in the 1950s and 60s and planted over 3,000 cherry trees, which gave the estate its name; his son Massimo established the 31-hectare vineyard in 2005 and in 2017 brought in the agronomists Claude and Lydia Bourguignon to map the high-altitude terrain parcel by parcel. These are the highest vineyards in Valpantena, up to 700 metres, cooled by summer air currents and swung by wide day-night temperature shifts that delay ripening by as much as a month against the valley floor, on the calcareous-clay soils of a pre-Alpine alluvial valley. Hand-picked bunches were dried in lofts for 100 days until they had lost 40% of their weight, then destemmed, gently crushed and fermented for twenty-five days in stainless steel at 15 to 20°C with daily pumping over, followed by 24 months in French oak barriques and tonneaux and six months in bottle. The 2020 vintage had a mild winter and early spring, timely bud break and a warm summer with occasional rain, giving rich flavours and fine tannins.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 17–19°C and decant an hour ahead.
