Cédric Colemyn, the fifth generation of the founding family, took over in 1995 and reinvested in the vineyard, which now holds HVE Level 3 certification for its environmental practice. The 25-year-old vines grow at 6,500 per hectare on clay-limestone ridges and are picked plot by plot once tasting and analysis show full maturity. Fermentation ran in stainless steel and concrete vats at around 26°C with twice-daily pump-overs, followed by 18 months in vat and bottling without fining to keep the fruit intact.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 16-18°C. Good with roast lamb, steak and chips, duck breast, or hard cheese such as Comté. Drinking well now and through 2029; a short decant helps but is not essential. Sealed with a Twin Top technical cork.
