The 15-hectare vineyard sits at 620 metres on volcanic soil rich in pumice, minerals and fossils, where warm days and cool nights give a long ripening season; the spur-pruned vines are farmed to organic and biodynamic principles and are in conversion to certified organic, with pheromone confusion and natural bacteria in place of synthetic pesticides. Winemaker Salvatore Rizzuto made the wine reductively to keep sulphur low: gently crushed, fermented 12–14 days at 14–18°C in steel, then seven months in steel with no oak and at least two months in bottle.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with grilled swordfish, pasta alle vongole, fried artichokes and fresh ricotta.
