Vanotu is the flagship: three south-facing parcels spanning the Tre Stelle, Marcarini and Basarin crus at 300–350 metres on limestone-rich soils, the highest of them replanted by Luigi Pelissero in 1964. The estate is certified under the SQNPI sustainable viticulture scheme. After a temperature-controlled fermentation the wine spends 20–22 months in barriques, 80% of them new, then nine months in bottle before release.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with braised beef, roast game, truffle pasta and aged cheese.
