The Pinot Noir comes from a single south-west-facing block high on the farm and the Chardonnay from a gravel-soil block, both cooled all summer by winds straight off the ocean. Cellar master Anné van Heerden had the hand-picked fruit whole-berry pressed, fermented each variety separately, blended the base wine, and then took it through a second fermentation in bottle with at least 36 months on the lees before disgorging. The estate is a member of South Africa's IPW and WIETA schemes and the Walker Bay Conservancy.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe well chilled at 6–8°C as an aperitif, or with oysters, fish and chips, sushi, or a creamy chicken dish.
