Cannonau 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eSella \u0026amp; Mosca was founded by two Piedmontese, an engineer and a lawyer, who began reclaiming uncultivated Sardinian land in 1899; the first vineyard followed in 1901 and the cellars in 1903, still used for ageing the wines today. The estate runs to 520 hectares just over six miles from Alghero, with further sites in Gallura and Sulcis, and since 2016 has belonged to the Terra Moretti family, certified by Equalitas for its sustainability work. The Riserva fruit comes from the Alghero vineyard, spur-cordon-trained vines averaging eighteen years at 4,000 plants per hectare, where the Mistral and the nearby sea leave a saline mark. Fermentation ran at 18 to 28°C in stainless steel with maceration on the skins, then at least six months in oak barrels and two further years in the cellar.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 16–18°C. Good with roast lamb, slow-cooked beef, roast pork, pecorino sardo, or a rich tomato and sausage pasta. Drinking well now, with the structure to keep for a decade or more.
