Cabernet Sauvignon 88%, Merlot 12%.\u003c\/p\u003e\n\u003ch3\u003eThe producer\u003c\/h3\u003e\n\u003cp\u003ePichon Baron is a Second Growth of the 1855 classification, with 92 hectares of deep Pauillac gravel over sand that drains freely yet holds just enough water; the vines average 35 years old and the grand vin has been made from the \"Butte de Pichon Baron\" plot since 1694. Winemaker Jean-René Matignon works with a cold pre-fermentation soak, native yeasts and gentle extraction at 24–29°C, then 18 months in barrel, 70% new. The estate holds HVE Level 3, the top tier of France's environmental certification. 2021 was a test of nerve: a very wet winter, hard April frosts, mildew pressure in June and a cool, rainy summer, before a dry spell from mid-August to mid-September ripened the seeds and tannins. The Cabernet came in between 30 September and 7 October, and the wine was bottled in June 2023.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with roast lamb, rib of beef, venison and aged hard cheeses. A classical vintage that will reward 20 years or more in a cool cellar; if you open one early, decant for two hours. Serve at 17–18°C.
