Pinot Noir 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eSylvain Debord is Burgundian by birth, trained at the Lycée Viticole de Beaune from 1991 and then at the University of Burgundy, where he contributed to technical research projects and managed the experimental viticultural centre at Marsannay-la-Côte; working alongside Nicolas Potel since 2006, Debord now vinifies fruit from a close network of vineyard partners across a mosaic of appellations. This parcel of old vines was planted in 1963 in the centre of the Clos de Vougeot, on a gentle 3% east-facing incline where morning sun builds complexity and cool nights hold acidity; the densely planted vines run deep into complex, stony clay and limestone, are sustainably farmed with local compost, copper and sulphur and mechanical ploughing, and are hand-harvested at optimum maturity. Fermentation ran with 30% whole bunches and wild yeasts in temperature-controlled stainless steel for three and a half weeks, pump-overs by gravity and punch-downs by foot, followed by 14 months in 228-litre barriques from Central French forests, all of them new. 2021 was punishing: frost on 3rd April took temperatures to -7°C and destroyed 90% of the shoots, and although late-June flowering was followed by a hot summer with enough rain to reach good maturity, the September harvest was tiny — and excellent.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 16-18°C.
