Garnacha 80%, Syrah 20%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eQuinta de Quercus is a 44-hectare estate in DO Uclés, set at 800 metres in the heart of Castile, where winemakers Tao Platón and Sam Harrop work with parcels of low-yielding old vines. This wine comes from Viña Ocaña, the oldest plot on the estate, a gently sloping parcel of chalky soils where the altitude brings a distinct freshness and warm days tempered by cool nights hold the acidity while the flavours concentrate; the vineyard is cultivated sustainably and the grapes are hand-picked at optimum maturity. There is no predetermined formula here: the grapes were carefully selected and destalked, each parcel was vinified separately in small temperature-controlled stainless steel tanks with the temperature, length of fermentation, number of pump-overs and post-fermentation maceration all varied tank by tank, and the wine then spent twelve months in 300-litre French and 225-litre American oak barrels, a quarter of them new.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 16-18°C. It suits grilled lamb, beef short ribs, barbecued vegetables and aged Manchego. Drinking well now and over the next three to five years; an hour in a decanter suits it.
