Shiraz 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eJim Barry was the first qualified winemaker in the Clare Valley, graduating in oenology from Roseworthy Agricultural College in 1947, and his work helped establish the region as a benchmark for world-class Riesling. The winery he founded in 1959 is still family owned, run by a third generation of Roseworthy graduates, with Peter Barry's children Tom, Sam and Olivia as winemaker, commercial manager and brand ambassador. This bottling comes from a single site, the Florita vineyard at Watervale, where the Shiraz block sits on a gentle north-west facing slope over a thin layer of loam above limestone; the vines are trained on a single cordon with rod and spur to keep canopy growth even and the fruit uncrowded, and the valley's wide day-to-night temperature swing is what keeps the Shiraz elegant rather than heavy. The grapes were destemmed, sorted and gently crushed with a small proportion of whole berries left intact, then fermented in stainless steel over seven to nine days with heading-down boards submerging the skins, twice-daily pump-overs and a daily rack and return. A third of the fruit was co-fermented with 15% whole bunches for aromatic lift, and after malolactic conversion in tank the wine spent 12 months maturing in French oak.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 16-18°C. Good with a rib of beef, slow-cooked lamb shoulder, sausages off the barbecue or a mature cheddar. Drinking well now and over the next five to eight years; an hour in a decanter opens it up.
