Susumaniello is a thick-skinned native of Puglia that was once used only for blending and nearly disappeared; these vines grow on shallow, rocky sandy loam near the Salento coast, Guyot-trained and hand-harvested, farmed with copper and sulphur and precision viticulture to cut chemical use. After a temperature-controlled maceration and a 10-day steel fermentation, the wine goes through malolactic conversion and six months in 225-litre French and American oak. 'Susco' means 'introverted' in the local dialect, hence the label that hides its own name.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eTry it with grilled lamb, sausages with lentils, aubergine parmigiana or aged pecorino.
