The grapes come from a single vineyard, Rancho Réal in the Santa Maria Valley, one of the coolest places in California where vines ripen at all — planted in 2010 on sandy loam at 200–290 metres, certified sustainable, with a hang-time long enough to build rotundone, the compound behind Syrah's pepper. After picking, bunches are dried briefly on racks in the vine's own shade to concentrate the fruit and mature the stems, then the Syrah and Viognier are co-fermented in steel with half the fruit as whole clusters. The wine is raised with as little oxygen as possible — lees contact, minimal racking, larger vessels — for 12 months in used barriques and bottled unfined and unfiltered.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with grilled lamb, peppered steak, charcuterie and olive-rich Provençal dishes.
