Barba Yannis is a 3.71-hectare block bought in 1994 from the Mr Yannis it is named after — ungrafted, pre-phylloxera bush vines planted in 1919 at 620–710 metres on sandy clay loam over limestone, cropping just 25 hl\/ha, with root-zone-drying irrigation to see them through the hot summers. The grapes are destemmed, lightly crushed and cold-soaked, fermented with a native yeast isolated from this very block, kept 18 months on fine lees with stirring, matured 24 months in medium-grain Allier oak and given at least a year in bottle, unfined and unfiltered.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with slow-roast lamb, beef stifado, grilled mushrooms and aged hard cheeses.
