Fruit for Botmaskop comes from 13 to 22 year old vines on granite-derived Hutton and Tukulu soils across Stellenbosch, cooled by Atlantic breezes and hand-picked in the early morning; the vineyards are IPW-certified for sustainable farming. Winemaker Morné Vrey ferments 70% whole berries at 24-26°C with gentle punch-downs, gives the Cabernet Sauvignon four weeks on skins after fermentation, basket-presses, then matures the wine for 16 months in 40% new French oak.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eRoast lamb, a rib of beef, venison or a mature cheddar.
