Hack and Stella Wilson founded it in 1980 and made the first vintage in 1984; the Terlato family joined in 2000, planted the last 18 hectares entirely to Cabernet in 2002 and took sole ownership in 2004. The estate now has 48 hectares split into 28 blocks, is certified Napa Green, and is run by winemaker Elizabeth Vianna. Tomahawk is the coolest single vineyard on the property, closest to San Pablo Bay, where sea breezes and cold nights keep the fruit fresh and the volcanic soils push the cordon-trained vines to root deep. The hand-picked grapes were fermented in stainless steel with 30–40 days on the skins, made without additions, then aged 18 months in French oak, 70% new.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with rib of beef, lamb chops, venison and hard, aged cheeses.
