This one comes from a low-yielding 6.45-hectare vineyard in Cauquenes, Maule, planted in 2009 on the bank of the Tutuvén River, which cools the vines through warm afternoons; the clay-and-silica topsoil over weathered granite holds water and releases it slowly. The grapes were cold-macerated for five days, fermented with natural yeast over 18 days with three daily pump-overs, left on the lees for a further two weeks, then aged 14 months in French oak, 30% new. The estate is certified by Sustainable Wines of Chile.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with red meat, cheese and pasta.
