Grenache 65%, Mourvèdre 17%, Syrah 10%, Cinsault 3%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eThe Brunel family settled in Châteauneuf-du-Pape in the 17th century and has made wine for five generations; André Brunel took over in 1971 and expanded the estate, which now covers 22 hectares in Châteauneuf-du-Pape and 40 in the Côtes du Rhône, and is farmed sustainably without herbicides or pesticides under HVE certification, today by his son Fabrice. The wine is drawn from several plots, each contributing something different: gravel beds at Bois de la Ville and Les Serres that drain hard and concentrate the juice, red and blue clays at Farguerol and Cansaud for aroma, and the chalky limestone of Cabrières and Revès for structure and length. The countless round pebbles that cover the vineyard, les cailloux, give the wine its name. Grapes were partly destemmed and pressed with minimal extraction, fermented with selected yeasts in temperature-controlled concrete at 28-32°C with daily pump-overs; Grenache and Mourvèdre stayed in concrete for 18 months while the Syrah spent the same time in first- and second-use barriques to soften its tannins, with the final blend assembled six months before bottling.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 16-18°C. It suits roast lamb, game birds, braised oxtail, mushroom risotto or a plate of aged cheeses. Drinking well now and over the next three to five years, and better for an hour in a decanter.
