La Prima is a single vineyard of marl and clay soils, and Gran Selezione is the summit of the Chianti Classico pyramid: estate or single-vineyard fruit only, stricter standards, and no release until 30 months after harvest. Winemaker John Matta, four times IWSC Italian Winemaker of the Year, fermented this with wild yeasts in temperature-controlled tanks with regular pump-overs, then aged it 20 months in French oak barriques and a further year in bottle.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with red meat, cheese and pasta.
