Soothsayer comes from ungrafted bush vines over 100 years old on the steep granitic slopes of Guarilihue in the Itata Valley, less than 12 miles from the Pacific and farmed entirely by hand, with pruning timed to the local moon cycles. The fruit was fermented naturally in open-top vats with native yeasts, punched down and pressed by hand; a fifth was vinified as whole bunches and trodden by foot for extra grip, and the wine then aged in third-use barrels and foudres across two winters.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe lightly chilled (14–16°C) with charcuterie, roast chicken, grilled pork, mushroom dishes or a tomato-rich pasta; its acidity also handles moderately spiced food well.
