Cava. The 500-hectare estate, with 102 hectares under vine, sits at an average of 360 metres in the mountainous Subirats area, on shallow, terraced soils that limit vigour and yields; 60% of the vines are bush-trained and all fruit is hand-harvested. Whole bunches were lightly pressed, the must clarified by cool static settling and fermented in stainless steel, before secondary fermentation in bottle and 24 months of ageing on lees under winemaker Pere Llopart. The vineyards are certified organic, using cover crops and pheromone confusion in place of pesticides.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 6–8°C in a white-wine glass to enjoy the aromatics.
