Mas Las Cabes is their 15-hectare estate on the black schist and limestone of Espira de l'Agly, in the garrigue-covered foothills of the Corbières, where the Tramontane wind and arid summers keep yields to around 30hl\/ha. The grapes were hand-picked, macerated on the skins for five hours, pressed straight away and fermented in temperature-controlled stainless steel, then rested six months on fine lees.
