This Malbec comes from plots 8, 9 and section 7, planted in 2008 and irrigated from wells fed by Andean snowmelt. Winemaker Paula Gonzalez cold-soaked the destemmed fruit for two to three days, fermented with wild yeasts and left the wine on skins for 25 days after fermentation; 60% then spent 12 months in second- and third-use French and American barrels, with the rest kept in stainless steel to preserve freshness.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eA natural match for grilled steak, lamb chops or a slow-cooked beef stew, and good with hard, aged cheeses.
