Vineyard Selection blends ungrafted old-vine Malbec, averaging 80 years old, from three traditional Mendoza terroirs: clay-loam over rock at Vistalba, the stony riverside soils of Perdriel, and lean, permeable clay-loam at La Consulta, all hand-picked into 20 kg cases. The sorted berries were fermented with wild yeasts in small concrete vats after a five-day cold soak, held at 26–28°C, given 15 days' post-fermentation maceration for structure, then aged 16 months in first-, second- and third-use French oak.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with steak, slow-roast lamb, venison and hard cheeses. Drinking well now and will develop for ten years; decant for an hour. Serve at 16–18°C.
