Chardonnay 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eMaison Prosper Maufoux was founded in 1860 by a notary who gave up his practice to start a wine house, and since 2010 it has belonged to the Piffaut family, whose Burgundy roots run back more than two hundred years; they moved it to the Château de Saint-Aubin and its nine hectares in the heart of the Côte de Beaune. La Pièce sous le Bois lies in the Hameau de Blagny at 330 metres, the highest point in Meursault, on the Puligny-Montrachet border and on the edge of the woods; the two-hectare plot was planted in 1959 and again in 2010 on chalky white marl, and the basin it forms gives low yields with naturally high acidity. The estate is HVE Level 3 certified and is running soil geology research to measure the effect of its vineyard decisions. Hand-harvested fruit was pressed gently as whole bunches, settled at 12°C for a day, then fermented and put through malolactic conversion in barrel, spending fourteen months in lightly toasted blonde French oak of which 30% was new, with no racking. 2022 was hot, dry and early, and the grapes came in ripe and healthy.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 12–14°C. Lobster, turbot in beurre blanc, roast veal, or a mature hard cheese. Worth another year or two in bottle, and it will hold for ten to twenty.
