Chardonnay 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eMichel Gayot grew up among the vines of a Burgundian family and came to wine by a roundabout route, studying management and working in the wine trade in France and abroad before acquiring this holding in the heart of Burgundy, which he farms alongside the family estate in Beaujolais. The vines lie on the clay-limestone slopes of the Côte d'Or escarpment at Meursault: the clay holds water through the growing season, the limestone gives the wine its mineral line. Fruit is picked by hand at full ripeness, settled cold for a day or two and fermented in part on wild yeasts, with malolactic conversion in French oak, then nine to twelve months in 228-litre barriques of which a fifth are new. The 2022 harvest came in mid-September after a temperate season with useful rain, and brought both quantity and ripeness after three short years.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 11–13°C.
