This wine comes from the single Gouriona vineyard at Plataea, at the foot of Mount Kitheronas, where 60-65-year-old gobelet-trained Savatiano vines at 250-320 metres give tiny yields and are picked at night to keep aromatics and acidity. Fifteen percent whole bunches went into a 48-hour cold maceration, fermentation was with wild yeast in stainless steel at 14°C, and the wine spent 21 months maturing with regular bâtonnage before bottling unfined and unfiltered.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eRich enough for roast chicken, pork belly, grilled octopus, feta and honey, or mushroom risotto. Serve at 10-12°C rather than ice-cold, and give it a few minutes in the glass to open. Unfined and unfiltered, so a little sediment is natural. Drinking well now and will hold for three to five years.
