The Estate Series Pinot comes from vines 18–25 years old at 146 metres, six clones on deep red volcanic clay that is dry-farmed without irrigation, trained on the estate's distinctive Lyre trellis. The hand-picked fruit was fully destemmed, cold-soaked four days, then given 21 days on skins in open steel fermenters with gentle plunging, and aged 11 months in French oak, 35% new.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with duck, roast pork, mushroom dishes and salmon.
