The fruit comes from the Esposende and Gomariz estate vineyards in the Avia valley of D.O. Ribeiro, on terraced socalcos and sun-facing slopes of granitic sand known locally as sábrego, hand-harvested at full ripeness. Inma Pazos gave the grapes a cool skin maceration, fermented with wild yeasts in stainless steel with pump-overs and punch-downs, then aged the wine for four months in 500-litre French oak. The vineyards are farmed sustainably.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eExcellent with roast pork, duck, charcuterie, mushroom dishes and Galician-style octopus, and a good match for Manchego. Drinking well now and will keep for three to five years. A short decant softens it; serve slightly cool at 15–16°C.
