The Syrah grows at 1,470 metres in Gualtallary, Tupungato, on calcareous soils, and the Viognier at 1,400 metres nearby in deep calcareous and rocky ground; the vineyards are farmed to organic practice without certification, with high trellising, drip irrigation and hand picking. The two varieties were co-fermented on wild yeasts for 15 days at up to 28°C, left a further 20 days on skins, then matured for 16 months in foudre (50%), stainless steel (25%) and oak barrel (25%). Vigil calls 2022 the best year he has lived through, a vintage across Mendoza of firm acidity, ripe fruit and balanced alcohol.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 16-18°C. Good with peppered steak, lamb chops, chorizo off the barbecue or a hard sheep's cheese. Drinking well now and through to around 2030; half an hour in a decanter brings out the smoky side. Sealed under technical cork.
