2022 Chablis Premier Cru ‘Beauroy’, Domaine Dauvissat Agnès & Didier
About the Winery: Agnès & Didier Dauvissat are a respected family domaine in Chablis, known for their traditional, precise and mineral-driven style. Working with low yields, long lees ageing and minimal intervention, the estate crafts wines that faithfully reflect Chablis’ Kimmeridgian limestone soils. Their Premier Cru Beauroy comes from the southwest-facing slopes overlooking the Serein River, a site prized for producing Chablis of generosity, elegance and distinctive oyster-shell minerality.
Grape Variety: 100% Chardonnay
Appearance: Pale lemon with green reflections and crystalline brightness, typical of finely crafted Premier Cru Chablis.
Aroma: Citrus zest, green apple and white peach supported by floral tones, crushed oyster shell, flint and chalky minerality. Subtle hints of almond and white flowers add finesse and complexity.
Palate: Linear, vibrant and mineral-driven with crisp acidity framing flavours of lemon, pear and subtle stone fruit. The wine shows Premier Cru depth, combining texture with a focused saline finish and a long echo of flint and chalk. Elegant, pure and classically Chablisien in structure and expression.
Body: Light to medium-bodied with a refined, polished texture.
Acidity: High — tense, saline and essential to Chablis’ classic mineral precision and ageing potential.
Cellaring Potential: 6–10 years; developing notes of hazelnut, honey, deeper salinity and layered minerality while retaining structure and freshness.
Perfect Pairing: Oysters, shellfish, sushi, sole meunière, scallops, goat cheese (especially Crottin de Chavignol), and light poultry. Its flinty, saline backbone pairs perfectly with fresh and delicately flavoured dishes.
