Assyrtiko 100%.\u003c\/p\u003e\n\u003ch3\u003eThe producer\u003c\/h3\u003e\n\u003cp\u003eJim Barry was the Clare Valley's first qualified winemaker, a Roseworthy graduate of 1947, and founded the family winery in 1959; his son Peter has run it since 1985 and Peter's children Tom, Sam and Olivia are now winemaker, commercial manager and brand ambassador. Peter imported the Assyrtiko cuttings himself from Gaia's vineyard on Santorini and planted the first block in 2012 at Lodge Hill on Clare's eastern ranges, brown loam over clay and slate, later adding blocks on terra rossa at the Florita vineyard in Watervale; all sit in shallow soil over bedrock, which makes the vines struggle a little and concentrates the flavour. The hand-picked fruit was chilled to 6°C, destemmed and pressed, settled and racked with some light lees, then fermented cool at 14–16°C over two to three weeks, a small parcel in old French barrels for texture.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with grilled fish, oysters, calamari and feta salads. Drinking well now and will develop for three to five years. Serve at 8–10°C.
