The vineyard is worked by la lutte raisonnée, keeping chemical treatments to a minimum; vines have been farmed organically since 2019 and the estate is certified organic from the 2023 vintage. Estelle Roumage picks at full maturity and sorts strictly, then gives the juice eight hours of maceration and a cold stabilisation in tank. Fermentation takes place in new oak, and the wine then spends ten months on its fine lees with frequent bâtonnage for texture before bottling.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 10-12°C, in a decent-sized glass rather than a small one. Good with roast chicken, scallops, a creamy mushroom pasta, or a mature hard cheese. Drinking well now and for around five years, gaining weight as the oak settles. Sealed with a DIAM technical cork.
