Medeus comes from warm, sandy seaside vineyards brushed by north-easterly winds, where the sea air leaves a saline, mineral stamp on the wine; the vines average 15 years old, are farmed sustainably with Mediterranean scrub left around them for biodiversity, and the estate holds the Equalitas certification. Oenologist Giovanni Pinna fermented the fruit with selected yeasts in stainless steel, macerating for two weeks, then aged the wine for several months in tank to keep the fruit bright.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eA versatile red for roast lamb, grilled pork, a tomato-rich pasta, or anything from the barbecue; it also handles a cheese board well.
