Winemaker Daren Owers picks in the cool of the night to hold on to freshness, then crushes, destems and gently presses the fruit before a slow, cool fermentation. The wine spends six months on its fine lees in French oak puncheons for texture and complexity before blending and bottling.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with seafood, rich and creamy dishes, and poultry and pork.
