Côt is Malbec's original name from south-west France, and on Liguai's rocky alluvial and colluvial soils, cooled by mountain air and Pacific breezes, it makes something fresher and more expressive than its Argentine cousins. Winemaker Germán Lyon cold-soaked the fruit 48 hours at 7°C, fermented it seven days in steel at 22–28°C with 15 days on skins and daily pump-overs, then a further six days' maceration before 14 months in seasoned French barriques.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with steak, grilled pork, chorizo and hard cheeses.
