The Botanical Collection wines are each named for the wild meadow plant that dominates their block, and Lion's Tooth comes from the steep, east-facing home block — limestone-clay slopes with 30% clay and 15% active lime, planted 2000–2002 at 11,111 vines per hectare with a second planting in 2018, farmed biodynamically from the start. The fruit is crushed and soaked for two hours before pressing, wild-fermented in aged French oak, kept 12 months on lees in barrel and a further five on light lees in stainless steel, then bottled unfined and unfiltered.\u003c\/p\u003e\n\u003ch3\u003eFood and drinking\u003c\/h3\u003e\n\u003cp\u003eGood with roast chicken, crayfish, scallops and mushroom dishes. Drinking well now and will develop for eight to ten years; no need to decant. Serve at 10–12°C.
