Chardonnay 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eDomaine des Chenevières was established in the 1850s and has passed from father to son through six generations of the Lenoir family of winemaker-growers; Benoit Lenoir now runs the 45-hectare estate at Saint Maurice de Satonnay, eight miles north of Mâcon, where the vineyards are farmed sustainably with minimal treatments and yields held down for ripeness. Mont Pelé faces south-east on very dry, acidic limestone with a little clay — the limestone giving a light, fresh style, the clay holding water to carry the 35-year-old vines through warm summers — and the vines are pruned by the arched Guyot Arcure method to improve sap circulation, with the soils worked by hand where possible to reduce synthetic preparations. After a gentle pressing the juice was settled and clarified, fermented with selected yeasts at 18 to 20°C in stainless steel over three weeks, then racked and left on its fine lees until bottling to build texture and complexity.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 10-12°C.
