Narassa started as a happy accident in 2014, when a forgotten plot of Grenache near Maury was picked very late and turned into a dry red in an Appassimento style. The fruit comes from the Agly Valley, on black slate with vines averaging 60 years old; it is hand-picked late in small baskets, given a cold soak for colour and fruit, and 20% is aged in old sweet-wine barrels. The estate has shifted to regenerative farming and close water monitoring to cope with the Roussillon's hotter, drier seasons.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eA big, warming red for slow-cooked lamb, beef short ribs, rich stews, barbecue and hard cheeses. Drinking well now and will hold for five years or so; a short decant helps, and serve at 16–18°C rather than warm.
