Pinot Blanc 100%.\u003c\/p\u003e\u003ch3\u003eThe producer\u003c\/h3\u003e\u003cp\u003eDopff au Moulin was established at Riquewihr in 1574, and thirteen generations of the family have made Alsace wine since. The house was responsible for the tall stemmed bottle that still distinguishes Alsace, and in 1976, alongside five other producers, finally won AOC recognition for Crémant d'Alsace. The 70 hectares lie at around 300 metres in the foothills of the Vosges, which shelter the vineyards and leave the area with the lowest average annual rainfall of any French wine region. The Pinot Blanc grows between 250 and 380 metres on clay and marl, planted east-facing for the gentle morning sun, on vines averaging 30 years, with green harvesting and strict canopy management concentrating the juice. Grapes were picked by hand and the whole berries pressed slowly, then fermented at controlled temperature with selected yeasts and aged on the lees until the August following the vintage. The estate has held HVE certification since 2020 and has been in conversion to organic status since 2021.\u003c\/p\u003e\u003ch3\u003eFood and drinking\u003c\/h3\u003e\u003cp\u003eServe at 10–12°C.
